Jenessa Likes To Bake - Banana and Cinnamon Muffins

What do you do when your best laid plans to eat healthily fail and the entire bunch of banana's you bought are starting to brown faster than Beyonce on a beach? You make banana bread of course! Well, if you're me, ain't nobody got time for a loaf tin, so banana muffins are just as good. Through in some walnuts, chocolate or raisins and you have yourself a tasty snack that feels not-too-naughty to eat at breakfast time. 




You Will Need:
  • 100g (4oz) butter 
  • 2 eggs 
  • 175g (6oz) caster sugar 
  • 225g (8oz) self-raising flour 
  • 3 tablespoons milk 
  • 2 very ripe bananas, mashed 
  • Dash of cinnamon powder
  • 50g (2oz) chocolate chips/raisins/peanuts or walnuts (or a mix of all three like I've gone for)

Method:


The process is pretty simple - whack together your butter, sugar and flour, creaming it together with your milk to get things going. Once you're happy with the consistency, add you eggs and mashed banana - if your banana's are as ripe as mine, chances are they won't need much mashing.


Throw in cinnamon to taste and then put in your flavourings (FYI, walnuts are waaaay better than peanuts, I was simply using what I had in the cupboard for these photos)


Preheat your oven to 180C/160C fan/gas 4 and spoon out your mixture into paper cases. Your mixture should be quite wet, so be wary of overfilling cases if you want your muffins to have a neat uniform appearance.


And so you have it! If you're the hipster or health-conscious sort I've heard these are also pretty good with protein powder and the like, but the joy of such a basic base recipe is that you can have fun adding in whatever you like. Enjoy!
